Recipe: Pumpkin Spice Cupcakes

To help us get in the mood for Halloween we’re delighted to share a scrumptious Pumpkin Spice Cupcakes recipe from Zoe Sugg’s new book, Cordially Invited. These delicious cupcakes will help bring your Halloween table to life… or death.

 

PUMPKIN SPICE CUPCAKES by Zoe Sugg

I make a jar of pumpkin spice and use it throughout autumn and winter, stirred into porridge and hot chocolate and in all kinds of baking. You can buy pumpkin purée online and in some supermarkets or follow my recipe here. Decorate your cupcakes with sweets or edible glitter or make these cute marzipan pumpkins.

 

PREP: 25 minutes (not including making purée)

COOKING: 25 minutes

COOLING AND DECORATING: 40 minutes

MAKES 12

 

for the pumpkin spice mix

8 tbsp ground cinnamon

2 tbsp ground nutmeg

1 1/2 tbsp ground ginger

1 tbsp ground allspice

3 tsp ground cloves

 

for the cupcakes

1 tbsp pumpkin spice mix

1/2 tbsp baking powder

a pinch of salt

1/2 tsp bicarbonate of soda

140g plain flour

55g butter, softened

100g caster sugar

21/2 tbsp soft brown sugar

1 large egg

90ml milk

125g pumpkin purée

 

for the frosting

125g cream cheese

50g butter, softened

125g icing sugar

1 tsp vanilla extract

2 tsp ground cinnamon

 

essential equipment:

muffin tin and cupcake cases

stand mixer or electric beaters

piping bag fitted with a large nozzle

blender
